Terroir and winemaking

The ZIbibo grapes selected for the production of the wine Family Barone Montalto collection grow in the Valle del Belice, on dark, alluvial and deep, medium-textured soils, with a clayey-sandy silt composition and a good organic content. The Mediterranean climate of these territories contributes to giving the wine its typical characteristics. The vinification lasts 12 hours at a temperature of 4 ° C, the subsequent fermentation in steel lasts 20 days at 12-14 ° C; follow 3 months of aging with weekly bâtonnage.

Taste notes

The Zibibbo Family Collection is shown in the glass with a straw yellow color through green shades. Its pleasant scent precedes the harmonic sensations perceived by the palate, resulting more or less soft.

Zibibbo Barone Montalto can be pleasantly enjoyed as an aperitif, but also to masterfully enhance typical Mediterranean dishes based on fish and shellfish. Ideal pairing with aged cheeses, foie gras and many other tasty dishes.
