A metodo classico with surprising elegance

Marked by a mild winter, with good rainfall (767 mm of rainfall, a slightly higher figure compared to seasonal averages), which was followed by a cool, ventilated spring.

Food & wine

Pleasant for an aperitivo, excellent paired with finger food, seared scallops, sole meunière.

Excellent at 6 - 8°C/42 - 46°F°

Vinification

Fermentation takes place in stainless steel at around 15- 16°C (59-61). Second fermentation in the bottle follows. After tirage the Brut ages for about 30 months on the lees.

Ageing

Ages for 36 months on the lees.
